Marked for Lunch

On the recent Cheng Beng day, as usual there were lots of things to eat. Then, a relative still brought over some chee cheong fun which he had bought from the market. Chee cheong fun is a Cantonese dish. In Guangdong Province in southern China, it is known as laai cheung because the dish consists of rolls of noodles that are formed by pulling or pushing a wide strip of rice noodles. The rice noodle rolls end up looking like pig's intestine; hence the name chee cheong fun tooespecially when it is not filled with shrimps, beef, vegetables, or other ingredients. The original version is said to be seasoned with soy sauce; but here, the one served with a bright red sweet sauce seems rampant. While often served as snacks, I think I would like to have that for lunch.
