A Chinese Dish

I remember once while going to the morning market in Hat Yai, a friend suggested that we had Guay Jab for breakfast. Then she led us to a dilapidated looking shop where for the first time, I had just that; Guay Jab, the triangular shaped rolled rice noodles with lots of pig innards in a brown pork soup; the latter, brown; I suppose, because of the five spices used in preparing it. I haven't seen people selling the noodles back home in Taiping but it's supposed to be popular in Sarawak, Penang and Johor, especially in restaurants specialising in Teochew cuisine. I suppose then, Guay Jab is a Chinese dish and if it's popular in Thailand, I shouldn't be surprised. The Chinese in Thailand are mostly Teochew.
